Pumpkin Curry/Khatti methi kaddu k sabzi

Pumpkins are extremely nutrient food, they are rich in beta carotene- powerful antioxidants,vitamins and minerals. They are good for health as abundant source of potassium ,vitamin C and E.Most of the people underrated the benefit of pumpkins,so here i try to make one of the tasty dish of north Indian where pumpkin used as core ingredient  and i hope you will try and enjoy.

Ingredient
Pupmkin (Kaddu)(500 gm)
1 Table spoon Fenugreek seeds
Table spoon Mustard seeds
2 onion Medium size 
2 Fresh green chili
1 Tomato(Finely chopped)
4 Tablespoon ginger & garlic paste
1/2 Tablespoon Sugar
1 Tablespoon dried mango powder
1 Tablespoon Turmeric powder
2 Tablespoon coriander powder
2 Tablespoon cumin powder
1 Tablespoon Kashmiri lal mirch powder
2 Tablespoon Garam Masala
2 Tablespoon Mustard oil
Salt to taste
2 cup water

Preparation: 

Peel the outer covering of Pumpkin and cut it into medium size pieces.







Make a coarse paste of medium size onion &chilies.











How to make recipe
1. Heat  2 Tablespoon Mustard oil in Kadhai,However you can also sunflower oil or olive oil as per your taste but i prefer mustard oil as it give sharp taste to our dish. 












2. After oil get heated, add 1 Table spoon Fenugreek seeds till it became brown.



3. Now add Table spoon Mustard seeds,crackling will start so be careful while adding it to hot oil.

4. Add onion chili paste,saute them till it became golden brown.

5. Then add ginger garlic paste,saute them so that all the aroma and flavor get mixed.
6.Then add dried mango powder, mix all the ingredients and keep flame low to avoid burning of ingredient.
7. Then add pumpkin pieces and mix them,cover the lid & cook it for a minute.

8. Add 1 Tablespoon turmeric powder and mix it well.
9. Now add 1 Tablespoon Kashmiri lal mirch powder and mix it well.
10. Now add 2 Tablespoon coriander powder, 2 Tablespoon cumin powder & 2 Tablespoon Garam Masala, mix them properly.



11. Then add 1 cup water. Cover with lid and simmer on low flame for 5 minutes.

12. Now add 1/2 Tablespoon Sugar,Stir it well.

13. Now add 1 Tomato(Finely chopped),mix it properly and cook it for 3 minutes on low flame.



14. Then add salt to taste, stir well.


15. Now add remaining 1 cup water.Cover and cook it for 20 minutes on medium flame. Remember- do not over heat or over cook as pumpkin easily became too soft and water level must be checked so that proper curry can form.

16.  Hot Khatti Methi Kaddu k sabzi(Pumpkin Curry) ready to serve.
